George's

George's is the fine-dining restaurant of the Hôtel de Toiras. Its elegant, air-conditioned dining room, in shades of blue and white, opens onto a sweeping view of the quays and boats of the harbour at Saint-Martin-de-Ré. Through a wide window, the open kitchen invites you to follow the chef's every gesture, at the very heart of dinner. Here Ronan Fillatre creates a contemporary cuisine rooted in the local terroir: the day's catch from the La Rochelle fish market, salt from the neighbouring marshes, herbs and edible flowers gathered on the island. To be enjoyed alongside the wines of our cellar, set at the foot of the tower and curated with Éric Beaumard.
For a more singular experience, "Le Panier du Marché" invites guests of our hotels to accompany Chef Ronan Fillatre to the local market and choose the day's fish at his side, subject to availability.
Each evening, a valet service welcomes guests in front of the hotel. George's opens from 6.30 pm, daily in high season. Reservations recommended.
